My winemaking philosophy which I developed early on in my career is based on the concept that wine is a natural food. As such, the ultimate enjoyment of wine is as a graceful and harmonious accompaniment to a meal, whether it be simple or sublime.

While most of my wines are enjoyable by themselves, it is with food that they really shine, and reveal all of their nuances and textures. To me the best wines have the ability to bring out the best in the food they are paired with and conversely the food brings out the best in the wines.

Inspiration
With the birth of our first grandchild, June Olivia, in 2007, Diana and I were
inspired to commemorate her birth with a pink wine, or rosé. Due to its popularity,
we continue to produce a very limited amount each year.
The Harvest
Another warm growing season resulted in an early harvest of the Syrah at Clover
Creek Vineyard on August 28th and the Grenache from Cuatro Vientos Vineyard
on September 2nd. The grapes were harvested at low sugar levels specifically
for this blend.
Winemaking
Both lots were destemmed and crushed into harvest bins to allow the appropriate
contact time with the skins to pick up the right amount of color. The must was
pressed off, settled and transferred to stainless steel drums for fermentation.
After an average of 18 days of fermentation, the wine was racked to stainless
steel drums for a short aging period. The wines were blended, filtered and bottled
in January 2016.
The Wine
The wine has a beautiful pink color with copper accents. The aromas are a
tantalizing blend of watermelon, cantaloupe and strawberries. On the palate the
wine has flavors of cantaloupe and watermelon. The excellent acidity allows for
a long, crisp, lingering finish.
Food Pairings
Perfect for summer fare, this rosé will pair well with prosciutto-wrapped
cantaloupe, salmon sashimi, crab salads and even grilled sausages. Serve
moderately chilled.
