My winemaking philosophy which I developed early on in my career is based on the concept that wine is a natural food. As such, the ultimate enjoyment of wine is as a graceful and harmonious accompaniment to a meal, whether it be simple or sublime.

While most of my wines are enjoyable by themselves, it is with food that they really shine, and reveal all of their nuances and textures. To me the best wines have the ability to bring out the best in the food they are paired with and conversely the food brings out the best in the wines.

Inspiration
I discovered this rare Spanish white grape during a family vacation to Spain in the mid-1990s. Upon returning, I was fortunate to secure a small plot of Albariño at Clover Creek Vineyard.

The Harvest
Despite an early harvest in general, the Albariño grapes at Clover Creek Vineyard were harvested just four days earlier than in 2013. The sugar content of 21.6 Brix was identical to that of the 2013 grapes but with a slightly higher acid content.

Winemaking
The grapes were whole-cluster pressed and the juice settled overnight before being racked to a stainless steel tank for fermentation. The juice was cold fermented at an average temperature of 60° F. This cool fermentation helped preserve the delicate grape aromatics. The wine aged in a stainless steel tank and was bottled in mid-February 2015.

The Wine
The wine has a medium straw gold color. The complex aromas are of ripe apricots, honeysuckle and cantaloupe. On the palate it is light to medium bodied with flavors of apricots, which evolve into a briny salty sensation. The racy acidity, which is the hallmark of well-made Albariño, gives the wine a long, lingering finish.

Food Pairings
This wine will pair well with a variety of seafood including oysters with a classic mignonette or Pulpo Gallego – Spanish octopus with paprika.
