My winemaking philosophy which I developed early on in my career is based on the concept that wine is a natural food. As such, the ultimate enjoyment of wine is as a graceful and harmonious accompaniment to a meal, whether it be simple or sublime.

While most of my wines are enjoyable by themselves, it is with food that they really shine, and reveal all of their nuances and textures. To me the best wines have the ability to bring out the best in the food they are paired with and conversely the food brings out the best in the wines.

The Harvest
This limited production Chardonnay features fruit sourced from Zotovich and Rancho Santa Rosa vineyards in the Sta. Rita Hills. The grapes were harvested in early September with excellent sugar and acid balance.

The grapes were pressed as whole clusters, and the juice settled before being transferred to neutral French oak barrels for fermentation. The wines aged in the same barrels for 10 months prior to being blended and bottled in August 2014.

The Wine
The wine has a medium straw gold color. The aromas are of fresh green apples with hints of brown spices. On the palate the wine is rich with flavors of baked apples and brown spices. The finish is persistent and lingering with a hint of caramel and butter.

Food Pairings
This elegant, well-balanced Chardonnay has full flavors and crisp acidity that makes it an excellent accompaniment with food. We suggest pairing it with white fish sautéed in butter or olive oil and served with a cream-based sauce. Other seafood and roasted chicken dishes work beautifully with this wine.
