My winemaking philosophy which I developed early on in my career is based on the concept that wine is a natural food. As such, the ultimate enjoyment of wine is as a graceful and harmonious accompaniment to a meal, whether it be simple or sublime.

While most of my wines are enjoyable by themselves, it is with food that they really shine, and reveal all of their nuances and textures. To me the best wines have the ability to bring out the best in the food they are paired with and conversely the food brings out the best in the wines.

We are pleased to release another great example of the rare Spanish white grape, Albariño, from our long time source, Clover Creek Vineyard.

Due to a heat spell that occurred in late August, the Albariño grapes ripened earlier than normal. We harvested on September 7th at a sugar content of 21.6 Brix. The grapes were whole cluster pressed and the juice settled overnight before being racked to a stainless steel tank for fermentation. The juice was cold fermented at an average temperature of 60°F, which extended the fermentation period to eight weeks. This long, cool fermentation helped preserve the delicate grape aromatics. The wine was aged in a stainless steel tank and was bottled in February 2014.

The wine is a light gold color with complex aromas of exotic fruits such as mango, green papaya, and melon combined with carnations and honeysuckle. On the palate, the wine has a surprisingly juicy texture with flavors of poached pears sprinkled with brown sugar. The wine has the racy acidity that is the hallmark of well-made Albariño from cooler climates.

It will pair well with a variety of seafood including oysters, octopus and squid prepared in the Spanish style.
