My winemaking philosophy which I developed early on in my career is based on the concept that wine is a natural food. As such, the ultimate enjoyment of wine is as a graceful and harmonious accompaniment to a meal, whether it be simple or sublime.

While most of my wines are enjoyable by themselves, it is with food that they really shine, and reveal all of their nuances and textures. To me the best wines have the ability to bring out the best in the food they are paired with and conversely the food brings out the best in the wines.

For several years I have been producing Syrah from two vineyards, Alisos in the Los Alamos Valley and Clover Creek in the Santa Ynez Valley. I enjoy making these two wines because they offer very different expressions of the Syrah grape. The wine made from Clover Creek Vineyard has always been a softer, fruitier and more acidic wine than the wine made from Alisos Vineyard.

The 2010 harvest experienced milder temperatures than normal. This resulted in the relatively late harvest of Syrah grapes from Clover Creek Vineyard on October 15th and October 20th. The sugar at harvest measured a moderate 23.7 Brix and 24.0 Brix respectively.

The grapes were 100% destemmed and crushed into small open top fermenters. Fermentation lasted for an average of 10 days. After pressing, the wine was settled in a tank then transferred to French oak barrels for an aging period of 17 months. Only 15% of the barrels were new. The wine was not fined nor filtered, so some natural sediment may form after a year or so of bottling aging. Decanting the wine is recommended if the wine is cellared for a length of time.

The wine has a medium dark ruby color. The aromas are a blend of dried cherries and spices. On the palate, the wine is medium bodied, with flavors of cherries and herbs. The relatively high acidity gives the wine a bright quality and a long finish. The tannins are light but give the wine a mildly dry sensation.

Serve this wine with pork, grilled chicken and sausages.
